Shiitake is rich in bioactive molecules, micro- and macronutrients, minerals, amino acids, vitamins, enzymes, fiber, and secondary metabolites. Among the amino acids are good amounts of glutamic acid, also known as "brain food," which promotes the production of neurotransmitters and the transport of potassium to the brain. It contains high levels of polysaccharides (beta-glucans), including lentinan, a branched beta-glucan (β 1-3 β 1-6) that has demonstrated significant immunomodulatory properties. A particularly effective substance contained in Shiitake is eritadenine, considered the most important bioactive component responsible for lowering cholesterol levels.
